People use “Cajun” and “Creole” like they mean the same thing. They do not, and once you know the difference you start tasting it. The short version: Creole cooking came out of New Orleans city kitchens, where French, Spanish, African, Caribbean and Native American cooking all landed in the same pot. Cajun cooking came out of the country, from Acadian families who settled the bayous and cooked what was in front of them.

Creole leans richer. Butter, cream, tomatoes, layered sauces, a slower build. Cajun leans darker and more direct: a roux cooked long in a heavy pot, plenty of pepper, one vessel doing all the work. Neither is fancier than the other. They are just two answers to the same question.

At Bayou Fork we do not pick a side. Our food is a literal melting pot: there are no handed-down recipe cards here, everything is our own creation, and everything starts the same way: butter melting in a pot, or oil coming up to heat in the fryer. What we build on top of that is layered, not just seasoned. The spice is supposed to keep working on your tastebuds through the whole plate, not hit you once and quit.

Where to start on our menu

If you want the Creole side, order the Filet Étouffée: smothered, served over rice, and about as clear an example of the style as we make. If you want the fried, bold, country end of it, get the Fried Ribs or the Sweet Heat Wings. If you cannot decide, get the Big Daddy. It is our signature and the plate people come back for.

Every platter comes with one side, in lunch or dinner portions. Get the dirty rice with the étouffée. Trust us on that one.

How to order

We are at 10600 Fondren Road in Houston, open every day: 6.00am to 4.00pm for breakfast and lunch, then 5.00pm to 10.00pm for dinner. Drive-thru, pickup, or delivery out to Manvel, Pearland, Missouri City and Sugar Land. Same-day orders need to be in before 11.00am; larger orders generally need a day’s notice depending on size.
